How to Make Chocolate Butterscotch Dipped Strawberries

Chocolate butterscotch dipped strawberries are an elegant and delicious dessert. They are also quick and easy to make. This recipe is unique because you melt butterscotch chips with the chocolate. The result is silky smooth chocolate that pairs beautifully with the strawberries.

I love this recipe for chocolate-dipped strawberries. My husband created it many years ago. He makes them for me on special occasions such as Valentine's Day, my birthday and our anniversary.

One of the reasons I like them so much is that the chocolate does not get hard, crack and fall off. By adding the butterscotch, the chocolate is soft and velvety and stays on the strawberry when you bite into it. I also love the flavor combination of the chocolate and butterscotch with the strawberries. It is so delicious!

Another benefit is that this recipe is simple and easy to prepare. It only takes 20-30 minutes and three ingredients to make chocolate butterscotch dipped strawberries.

Ingredients

  1. Strawberries-fresh firm strawberries are a must. They can be cold or room temperature. Strawberries should have green stems so that you can hold the stem while you dip it into the chocolate mixture. There were 21 strawberries in the 16-ounce container.
  2. Semi-Sweet Chocolate-high quality chocolate is best. I like to use semi-sweet chocolate chips such as Ghiradelli.
  3. Butterscotch Chips-Toll House or Hershey Brand works well.

Step-by-Step Instructions

1. Prepare Strawberries

  1. Wash strawberries under running water. Drain well.
  2. Dry each strawberry either with a paper or cloth towel.
  3. Pro Tip: it is important that the strawberries are dry and that there is no moisture on the strawberries. Otherwise, the chocolate will not adhere to the strawberries.
  4. Once the strawberries are dry, lay them on a dry paper or cloth towel.

2. The best method to melt chocolate and butterscotch chips

  • Chips in measuring cup

  • First melt of chocolate chips

  • Melted chocolate and butterscotch

  1. Place chocolate and butterscotch chips in a microwaveable dish. I like to use a Pyrex® measuring cup.
  2. Microwave on high for 30 seconds. Stir.
  3. Heat on high for another 30 seconds. Stir until the chips are completely melted. The chocolate butterscotch mixture should be smooth and silky.

3. Dip the strawberries

  1. Place a sheet of foil on a cool counter. You can also place the foil on a sheet pan.
  2. Hold the stem and dip the strawberry into the chocolate to the top of the strawberry. Leave some of the red visible on the strawberry.
  3. Lift the strawberry out of the chocolate and let the excess drip off.
  4. Turn the strawberry up so that the chocolate stops dripping.
  5. Place the strawberry on the foil and allow them to rest until the chocolate is firm.
  6. Pro tip: foil works the best so that the chocolate does not stick. My husband said he has tried varies methods and he has found that foil is best for letting the chocolate get firm and not sticking.

That's it! So simple, easy, and delicious!

Storage

Chocolate-dipped strawberries are best eaten at room temperature the same day they are made.

Store them lightly covered with plastic wrap on your kitchen counter in a cool location away from sunlight or other heat sources. However, if you need to store them overnight, you can put them in the refrigerator.

They will not hold up for more than 1 day because the strawberries will begin to sweat and the chocolate will separate from the strawberry.

Chocolate covered strawberries cannot be frozen.

Tips for success

  1. Be sure to use fresh strawberries that are firm and free from any bruises.
  2. The strawberries must be dry before you dip them in the chocolate mixture.
  3. Melt the chocolate and butterscotch chips carefully or the chocolate will seize and get hard. It is important to melt the chips in 15-30 second increments. Be sure to stir between heating.
  4. I like to use a Pyrex® measuring cup so that there is enough depth to dip the strawberries. If you use a shallow bowl it will be difficult to dip them.
  5. Use foil to set the strawberries on while the chocolate is getting firm. Other surfaces might stick to the chocolate.
  6. Store the chocolate-dipped strawberries in a cool location away from heat sources.
  7. Eat the strawberries the same day you make them.

Decorating Ideas

I like plain chocolate-dipped strawberries. However, you can decorate them with various toppings.

While the chocolate is still soft, you can roll them in any of the following:

  1. Chopped nuts (hazelnuts, peanuts, almonds, pecans, walnuts)
  2. Shredded coconut
  3. Sprinkles
  4. Chocolate sprinkles
  5. Finely chopped chocolate or mini chocolate chips
  6. Drizzle with melted white or dark chocolate

What to serve with chocolate-dipped strawberries

Serve this elegant dessert with a special dinner such as Fast Roast Chicken and Roasted Carrots and Parsnips. A glass of prosecco with the chocolate-dipped strawberries will round out the meal!

Instructions

  1. Wash strawberries.
  2. Dry each strawberry with a paper or cloth towel.
  3. Place dry strawberry on a paper or cloth towel.
  4. Place a sheet of foil on the kitchen counter or on a sheet pan.
  5. Place chocolate and butterscotch chips in a microwavable container. I recommend that you use a pyrex measuring cup.
  6. Place measuring cup in the microwave and heat on high for 30 seconds.
  7. Stir the chocolate-butterscotch mixture.
  8. Place the measuring cup back in the microwave and heat for 30 more seconds.
  9. Remove the measuring cup from the microwave and stir until the chips are completely melted and the mixture is smooth.
  10. Holding the stem of the strawberry, dip the strawberry into the chocolate mixture. Remove and let the excess chocolate drip off the strawberry.
  11. Turn the strawberry upside down so that chocolate does not drip, and place it on the foil. Continue with the remaining strawberries.
  12. Let the strawberries rest until the chocolate is set and firm.
  13. Enjoy these delicious chocolate-dipped strawberries.
