These scrambled eggs and puff pastry bundles are perfect for a celebratory brunch or a weekend breakfast. The delicious breakfast bundles are filled with creamy scrambled eggs, crisp bacon, and cheese and surrounded with flaky puff pastry.

If you are looking for an elegant yet easy-to-prepare brunch entree, you have to make these scrambled eggs and puff pastry bundles. ey are the perfect finger food for Easter or Mother's Day brunch.

Admittedly, there is some dough rolling involved. Don't be turned off by this because chilled pastry dough is easy to roll out.

You can customize the scrambled egg filling by adding sliced mushrooms, diced red or green peppers, or your favorite omelet fillings. Leave out the bacon, and it is a vegetarian option. The filling options are endless. Use your favorite veggie, breakfast meat, and cheese combination.

The bundles are so versatile and a hit with kids and adults, which is a win-win! You don't even need utensils to eat them. They are the perfect finger food to serve for brunch.

The Best Way to Cook Bacon

I love bacon but hate the mess it makes when I cook it on the stove.

Recently, I discovered that the best way to cook bacon is in the oven. There is no mess, and I can prep other ingredients while the bacon is cooking.

To cook back in the oven, preheat the oven to 400°. Line a sheet pan with parchment paper or spray it with cooking spray for easy cleanup. Lay the strips of bacon on the pan and bake them for about 12 minutes. For even browning, turn the strips of bacon over halfway during baking.

Try this method the next time you need to cook bacon. I think you will agree that it is the best way to prepare it.

Easy Ingredient List

  • Puff pastry sheets-purchasing frozen puff pastry cuts the prep time by 95%. You can find puff pastry with desserts in the frozen food section of your grocery store. Make sure that you purchase puff pastry sheets, not shells.
  • Eggs are the main ingredient in these egg and puff pastry bundles.
  • Bacon-use your favorite bacon. I like an apple or smoked bacon because it adds great flavor.
  • Cheese-sharp or mild cheddar cheese or Colby jack cheese are delicious in this recipe. However, use your favorite cheese.
  • Flour-use the flour to lightly dust the cutting board's surface where you roll out the pastry. It prevents the pastry from sticking when rolling it out to make the squares.
  • Butter-you can use salted or unsalted butter.
  • Salt and pepper are used to season the eggs.

How to Make the Egg and Puff Pastry Bundles

  1. Spray sheet pan with cooking spray or line it with parchment. Place the bacon on a sheet pan.
  2. Cook in 400°F oven until crisp.
  3. Slice or crumble bacon. Set aside.
  4. While the bacon is cooking, grate the cheese.

  1. Whisk the eggs, salt, and pepper until combined.
  2. Melt butter in a non-stick skillet and add the eggs and crumbled bacon. Cook the eggs until almost set. They should look slightly wet.
  3. Lightly flour a cutting board. Roll out the puff pastry to make a 12-inch by 12-inch square.
  4. Cut the pastry into 9 4-inch by 4-inch squares. Score the pastry in 4-inch increments on all sides of the pastry to use as guides when cutting the squares.

  1. Spread about 2 tablespoons of the egg mixture diagonally on the squares.
  2. Sprinkle about 2 tablespoons of shredded cheese on the egg.
  3. Make an egg wash by whisking the egg and water together.
  4. Lift one corner of the dough and fold it over the egg & cheese mixture. Brush the dough with egg wash, then fold the opposite corner to make a bundle. Press to seal. Brush the entire bundle with egg wash. Sprinkle with salt and pepper, everything bagel seasoning, or grated parmesan cheese.

  • Substitute cooked breakfast sausage for the bacon.
  • My niece recently made these egg pockets and suggested using chorizo instead of bacon for a Mexican flare. Delicious!
  • Use your favorite omelet filling ingredients!

Leftovers

Heat leftovers in the microwave for 20 seconds or wrap them in foil and heat them in the oven at 325°F until warm.

What to Serve with Puff Pastry Bundles

These scrambled eggs and puff pastry bundles are perfect for a celebratory brunch or a weekend breakfast. The delicious and elegant bundles are filled with creamy scrambled eggs, crisp bacon, and melty cheese wrapped in a flaky puff pastry. 


Ingredients

Units Scale
  • 4 slices bacon
  • 4 ounces cheddar cheese
  • 8 large eggs plus 1 egg for the egg wash
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 sheet puff pastry from a 17.3-ounce package
  • optional: Everything Bagel Seasoning, grated parmesan cheese


Instructions

  1. Preheat the oven to 400°F.
  2. Line an 18-inch by 13-inch sheet pan with parchment or spray it with cooking spray.
  3. Place slices of bacon on the sheet pan.  Bake for 12 minutes or until the bacon is crisp.  Flip the bacon halfway through cooking.  Place the bacon on a sheet of paper towel to drain.  Crumble or slice the bacon into small pieces.
  4. While the bacon is baking, grate the cheese.
  5. Crack 8 eggs into a medium-sized bowl and whisk until smooth and well combined.  There should be no white streaks.  Add salt and pepper. 
  6. Melt the butter in a medium non-stick skillet over medium heat.  Add the egg mixture and crumbled bacon, and let the eggs cook for a few seconds without stirring them.  With a spatula or spoon, make large curds by pulling them across the bottom of the pan.  Continue until the eggs are almost set.  There will still be a little liquid in the eggs. 
  7. Roll out the puff pastry sheet on a lightly floured surface to form a 12-inch by 12-inch square.  Cut the square into 9 squares, each 4-inches by 4-inches. 
  8. Make an egg wash by whisking 1 egg with 1 tablespoon of water until well combined.
  9. Line an 18-inch by 13-inch sheet pan with parchment paper or spray with cooking spray. 
  10. To make the bundles, place approximately 2 tablespoons of scrambled eggs diagonally on the puff pastry square.  Top with approximately 2 tablespoons of cheese.
  11. Lift the one side of the puff pastry square and fold it over the scrambled eggs and cheese.  Brush the puff pastry with egg wash and fold the opposite corner of the pastry over to make a bundle.  Press to seal.  Finish remaining bundles
  12.  Brush the bundles with egg wash.  Optional:  Sprinkle bundles with everything bagel seasoning, salt, and pepper or grated parmesan cheese.  
  13. Place bundles on the prepared pan.  Bake at 400 °F for 15-20 minutes or until the puff pastry is golden brown and puffed.  
  14. Serve immediately.
