Easy Spicy Pimento Cheese without Cream Cheese Recipe

Description

Spicy Pimento Cheese is adapted from the Southern classic made with sharp cheddar cheese, mayonnaise, and pimentos.  Adding minced jalapeno and diced chili peppers gives it a nice kick.  Serve this easy crowd-pleasing spread at your next gathering!  


Ingredients

  • 8 ounces sharp cheddar cheese
  • 4-ounce jar pimentos
  • 4-ounce can diced chilies (mild)
  • 1 jalapeno, finely diced (remove seeds for less heat)
  • 4 tablespoons high-quality mayonnaise (see notes)


Instructions

  1.  Finely grate the sharp cheddar cheese on a box grater or a food processor.  Do not purchase pre-grated cheese). Place the cheese in a medium-size mixing bowl.
  2. Drain the pimentos and the chilies.  Add them to the grated cheese.
  3. Add the diced jalapeno to the cheese mixture.
  4. Add the mayonnaise.
  5. Mix the pimento cheese with a spoon or spatula until smooth and spreadable.  
  6. You can mix it with a mixer or food processor if you prefer.
  7. Place the pimento cheese in an airtight container and refrigerate until ready to use.
  8. Pimento cheese will keep for 5 days in the refrigerator.
  9. Remove 20 minutes before serving, so it is easier to spread and/or dip into it.
  10. Enjoy!

  1.    Use high-quality mayonnaise such as Best Foods, Hellmans, or Dukes.
  2.    Use high-quality cheese.
