Authentic Linzer Torte

Linzer Torte is a traditional Austrian pastry with a crumbly shortbread and nut crust, jam filling, and topped with a lattice. I will make your house smell AHHH-mazing.

Ingredients

Hazelnuts All Purpose Flour Sugar Butter Eggs Baking Powder Cinnamon  Cloves

Step 1

In a bowl of a stand mixer, cream butter and sugar until light and fluffy.

Add one egg, spices and rum (optional) and mix until the egg and spices are well encorporated.

Add flour, baking powder and hazelnuts.  Mix until well combined.

Divide dough into 3 equal balls. Tip:  Use a scale to weigh each portion to ensure they all weigh the same.

Place one dough ball in a greased pan and press it down so it is evenly distributed. Repeat with second dough ball.

Smooth the top with an offset spatula. Dip the spatula in cool water to keep it from sticking to the dough.

Make the lattice. Divide remaining dough ball into two portions. Take about 1/4 cup of the dough and roll in into a 3/8 inch log about 8 inches long on a floured cutting board.

Place the log on the edge of the cake pan on the base of the cake.

Spread raspberry jam on top of the base of the cake. Be sure it is an even layer.

Continue making lattice by rolling dough into logs and lay them on top of the jam and across the cake.

Continue making lattice by rolling dough into logs and lay them on top of the jam and across the cake.

Brush the top of the lattice with an egg wash.

Step 13

Bake for 30-35 minutes or until the lattice is golden brown. Cool the Linzer Torte in the cake pan for 10 minutes, then invert it onto a cooling rack
